Zephyr (Зефир) is a beloved Eastern European confection with centuries of heritage. It's a feather-light, melt-in-your-mouth treat made from whipped fruit purée, egg whites, and natural agar-agar — giving it a cloud-like texture unlike anything in Western desserts.
Unlike gelatin-based sweets, Zephyr is set with agar-agar derived from seaweed, making it naturally lighter and more delicate. It holds intricate shapes beautifully — which is why Lana uses it to sculpt breathtakingly realistic roses, peonies, ranunculus, and chrysanthemums.
